By the end of the course, students will have acquired a comprehensive knowledge of the metabolic pathways used by the human body to meet the structural, energetic, and tissue-specific needs of cells. In particular, students will understand the biological strategies and purposes that link the various phases of metabolism; they will gain knowledge of energy production and utilization processes within the cell, the role of mitochondria, and the regulatory mechanisms of key enzymatic reactions in relation to cellular metabolism. Leveraging this knowledge, students will be able to identify and comprehend the most important metabolic processes regulating the physiology and pathophysiology of tissues and organs, providing a solid foundation for the study of nutritional biochemistry TEACHING METHODS In-person and remote lessons. During in-person lessons, particular attention will be paid to the practical application of the concepts learned. SYLLABUS/CONTENT Molecular mechanism of activation and hydrolytic action of digestive enzymes for nutrient utilization. Carbohydrates. Digestion and absorption. Chemical nature and properties of simple sugars and polysaccharides. Glycogen and starch. Organization of starch granules. Soluble and insoluble dietary fiber. Sources of simple sugars, starch, and plant fiber. Lipids. Digestion and absorption. Chemical nature and properties of fatty acids, triglycerides, phospholipids, cholesterol, and derivatives. Essential fatty acids. Edible oils and fats. Proteins. Digestion and absorption. Chemical nature and properties of amino acids, polypeptides, and proteins. Essential amino acids and nutritional value of proteins.
