CODE 118257 ACADEMIC YEAR 2025/2026 CREDITS 3 cfu anno 1 SCIENZE E CULTURE AGROALIMENTARI DEL MEDITERRANEO 11758 (L/GASTR R) - IMPERIA SCIENTIFIC DISCIPLINARY SECTOR CHIM/07 LANGUAGE Italian TEACHING LOCATION IMPERIA SEMESTER 1° Semester MODULES Questo insegnamento è un modulo di: STATISTICAL, OPERATIONAL AND CHEMICAL RESEARCH OF TECHNOLOGIES AIMS AND CONTENT AIMS AND LEARNING OUTCOMES The course aims to provide a basic chemical understanding of the reactivity and properties of simple and complex organic molecules. Particular attention will be paid to the analysis of macromolecules of biological and food interest, with an overview of related technologies and transformations. At the end of the course, students will be able to: evaluate the properties of simple and complex organic compounds in relation to their structure, describe and compare general reaction mechanisms in organic chemistry, predict the products of simple reactions, describe, with examples, (bio)macromolecules and natural polymeric structures, evaluate the reactivity of natural macromolecules, discuss all proposed activities using the appropriate language. TEACHING METHODS The teaching strategies adopted include a blended and active approach, alternating lectures, online lessons and interactive learning. Specifically, the following will be used: Lectures and online lessons to introduce key theoretical concepts and to explore the content through videos, multimedia materials, and asynchronous reinforcement activities, encouraging independent and personalized learning. E-tivities and virtual classroom activities to stimulate individual reflection and collaborative discussion, in both asynchronous and synchronous modes. SYLLABUS/CONTENT Reactivity and structure of the main functional groups in organic chemistry. Main mechanisms of organic reactions: nucleophilic alkyl substitution, electrophilic addition, elimination, nucleophilic addition to the carbonyl group, nucleophilic acyl substitution, electrophilic aromatic substitution. Oxidation-reduction in organic reactions. Macromolecules of biological interest: carbohydrates (monosaccharides, disaccharides, polysaccharides), amino acids and proteins, lipids (triglycerides), nucleic acids (fundamentals). ASSESSMENT METHODS The exam will assess the student's operational and methodological skills in solving specific problems related to the properties and reactivity of compounds ranging from simple organic molecules to complex biomolecules, especially in relation to technological and food applications. The exam will assess the student's ability to: analyze and compare the properties and reactivity of simple molecules and biomacromolecules; discuss the mechanisms and products of main organic reactions, describing them in general, and critically analyzing specific problems; predict the products of simple organic reactions. The correctness and completeness of the answer will be assessed.
