Information updated until 30/06/2026 CODE 118297 ACADEMIC YEAR 2026/2027 CREDITS 12 cfu anno 1 SCIENZE E CULTURE AGROALIMENTARI DEL MEDITERRANEO 11758 (L/GASTR R) - IMPERIA TEACHING LOCATION IMPERIA MODULES Questo insegnamento è composto da: FUNDAMENTALS OF FOOD MYCOLOGY MICOLOGY IN THE MEDITERRANEAN DIET HUMAN NUTRITION DIETETICS PRINCIPLES IN THE PATIENT WITH DISEASE TEACHING MATERIALS AULAWEB AIMS AND CONTENT LEARNING OUTCOMES At the end of the cluster, the student will be able to: - assess nutritional requirements across different stages of life and in pathological conditions; - apply appropriate dietary principles for health promotion and for the management of individuals with diseases; - analyze the role of foods, including fungi, in the Mediterranean diet; - recognize the main types of fungi and the risks associated with fungal-derived foods (toxicity, mycotoxins). - Acquire the fundamentals of mycology. - Understand the presence of microfungi (or moulds) in different foods, considering both their beneficial and harmful aspects. - Recognise the main edible macrofungi (including hypogeous species), toxic fungi, and have knowledge of the principal mushroom poisoning syndromes. - Understand the contribution of the consumption and use of different fungal forms to the Mediterranean diet. - Learn the main aspects related to the production and processing chains of cultivated and wild mushrooms (including hypogeous species), as well as the relevant regulatory framework. ASSESSMENT METHODS Successful completion of the course is assessed by the student's mastery of the fundamentals of mycology, the use of mushrooms in the Mediterranean diet, nutritional needs, and dietary recommendations for ensuring proper nutrition for patients with medical conditions or hospitalization. The aim is to assess the degree of learning, autonomy, ownership of language and ability to summarize achieved by the student.
